Paleo Shepherds Pie

I’ve been thinking about Shepherd pie for days. Days. So it had to happen. And here it is.

Paleo Shepherds Pie
1 head of cauliflower
1 1/4 pound ground beef
1 1/4 cup beef broth
2 carrots, chopped
3/4 cup green onions, chopped
1 egg
2 teaspoons Bells Seasoning
1/4 cup almond milk
1 tablespoon of ghee
1 tablespoon of arrowroot flour

Preheat your oven to 375 degrees Fahrenheit.

The first thing you need to do is steam the cauliflower. Once tender, remove from the heat and allow it to cool. Once it had cooled, add the ghee and mash.

In a small saucepan, bring beef broth and almond milk to a boil. Add the carrots and Bells Seasoning. Boil until the carrots are slightly tender. Add the arrowroot flour and stir well.

Mix the ground beef, green onions, and egg in a separate bowl. Pack this evenly on the bottom of the casserole dish. The next layer is the the beef broth and carrot. Spread evenly over the meat. The last layer is the mashed cauliflower. Again, spread evenly.

Bake for about 40 minutes, or until the top layer is golden brown. Allow to cool before serving, or you’ll burn your tongue and then how will you taste the magic?
