Meat. Apples. Yum. I have to make room in my freezer for my meat share (that I’m super excited to get), so I had to cook the biggest thing in there – a rack of ribs. I also still have a fridge full of apples, so I got inspired to make some Carolina goes New England ribs. I’m pretty smart like that.
Apple-Tastic Ribs
2/3 cup apple cider vinegar
2/3 cup apple sauce with cinnamon
5 tablespoons good brown mustard
2 teaspoons cinnamon
3 1/4 pounds of ribs
In a small saucepan, combine everything but the ribs. Stir well and bring to a simmer. Remove it from the heat right after it starts simmering. Preheat the oven to 250 degrees Fahrenheit. Line a roasting pan with aluminum foil and lay the ribs in the pan. If you have a meat injector, inject some of the sauce into the meat. My injector cracked… Very sad face… So I just skipped to the next step and slathered half of the sauce on the bottom side of the ribs. Cover the pane with another piece of foil, and put it in the oven. In one hour, take out the ribs and flip them. Slather the rest of the sauce on the other side f the ribs, cover them and out them back in the oven. Forget about them for about 3 1/2 hours.
Take out and let them cool a bit before serving. Here is some food porn for your pleasure.
