How much fun is Halloween? Costumes and decorating and treats and fun! I needed some sort of shareable party food that could be super fun. I saw Witch Finger cookies in Pinterest and wanted them in my life, but, alas the recipe had gluten, tons of sugar, and dairy. Some people would have let it go there, but I said “challenge accepted, Pinterest!” And here are the tasty treats I created for my the trick or treater in my belly.
Green Food Coloring
2 cups of spinach
You need a food processor, blender, magic bullet or something with the ability to purée. You also need a tea strainer or cheese cloth. Purée the spinach in your food processor if choice. Once you have a smushy spinach goo, out a small saucepan very close to the processor and spoon the purée into a tea strainer laid across the saucepan. Using a cereal spoon, press the spinach into the strainer. Once you’ve pressed all the liquid you can from the spinach purée, place the saucepan in a mid-heat to cook down a bit. Be sure to stir while it’s simmering. You should end up with green liquid like this:
Now, you’re ready to get started!
Witch Fingers
2 Tablespoons thickened food coloring
Juice of 2 limes
1 teaspoon vanilla
1 Tablespoon ghee
1 egg
1 teaspoon ghee
1 cup almond meal
1 cup ground pistachios
1/4 cup coconut flour
3/4 teaspoon salt
3/4 teaspoon agave
Coconut oil
A handful of almond slivers
In a small saucepan, combine food coloring, lime juice, vanilla, and 1 tablespoon of ghee. Stir frequently as it sinners down to half the volume.
Preheat the oven to 350 degrees Fahrenheit.
In a food processor, blend almond meal, pistachio flour, coconut flour and salt. Blend well. VERY well. About five minutes. Beat an egg with the remaining 1 teaspoon of ghee and the agave. Add to the flour combo and blend well. Add in the food coloring mixture. Blend again. This time, it should turn into a large green baseball.
Grease a cookie sheet well. Shape finger to be about 2 1/2″ to 3″ long and about 1″ thick. Place an almond sliver in one end if each cookie-to-be. These don’t expand, so about 1/2″ apart on the pan should be fine. I cooked them for about 15 minutes in my quirky little oven and they developed hints of brown.
These are super lime tasting and lots of fun to serve up to friends.
