Are you looking for a burger bursting with all the flavors? Salty, sweet, tart, and tasty!! This burger has it all. I was craving this Spanish stew my mother made with olives and lemon and cumin, but I leave for another trip tomorrow, so I don’t want a big thing of stew hanging around. I also had this great looking ground beef from my recent Walden Local Meat delivery that I’ve been dying to use. And so, an idea was born to meld the two. There are two parts to this, the burger and the chutney. Here you go! This recipe makes one serving because my apartment is a disaster on packing day.
Chestnut Cumin Burger
2/3 cup of chestnuts, chopped
1 handful of ground beef
1 tablespoon of cumin
1 egg
Work the chestnuts through the meat, and shape into a patty. Pat each side of the party liberally with cumin. Cook in a skillet on medium heat, searing first one side, then the other. Resist the urge to squish the burger or you’ll end up with a tough, dry burger and that’s a waste of good meat.
Next up in the skillet, fry up the egg to your liking and use it to top the burger.
Apple and Olive Chutney
1/2 apple, chopped
1/3 cup chestnut, chopped
Juice of half a lemon
1/4 cup green olives, chopped
While the burger is cooking, combine all ingredients in a small skillet of sauce pan. Stir occasionally to prevent sticking. When the apples are mushy, the chutney is done.
