Brunch with The King

I love 60s music. I love muffins. I decided to bring two of my great loves together and make some Elvis muffins. It all started with three bad bananas.

When a banana turns to a spotty, smushy mess, that is a bad banana if you want to eat just the banana. But if you can think of other futures for that banana, then that’s just when that banana gets good.

The King loved banana and peanut butter sandwiches. He and I had this in common until I found out I couldn’t eat legumes and peanuts were the direct cause of heartburn and nausea. Now, almond butter. That’s the haps! So here is what I concocted:

Elvis Muffins

1/2 Cup Almond Butter
3 Over-Ripe Bananas
1/4 Cup Dark Cocoa Powder
1/4 Cup and 1 Tablespoon Coconut Flour
1/4 teaspoon Salt
1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
2 Tablespoons of MELT or Ghee
1 Tablespoon Vanilla
2 Tablespoons Honey
3 Eggs

Step one, get out your puree-ing machine of choice. Step two, preheat the oven to 350 degrees Fahrenheit. Next up, get those bad little bananas and make that smooshy mess become a liquid. I’m assuming you have the sense to not include the peel. Add the eggs and blend thoroughly. Next in line comes the almond butter, vanilla, butter substitute, and salt.

In a separate bowl, use a fork and mix the cocoa powder, coconut flour, baking soda, and baking powder. Add to the rest of the mixture and blend again. Last into the blending goes the honey. Blend for about 45 seconds, then let it set for a few minutes while you put the cupcake wrappers in the muffin tin. It’s important to let the mixture set for a minute, so the coconut flour can absorb the moisture. If you don’t do this, you’ll probably have flat, dense muffins that won’t be cooked thoroughly.

Fill each cup about 2/3 – 3/4 full. If you don’t have enough to fill the tin, fill the remaining cups with water. This will help to keep the baking even.

I baked for about 30 minutes on a hot, humid day. I used the old reliable toothpick test to be sure they were done. As with most coconut flour paleo eats, let these cool completely before enjoying. The flavor will be stronger. Uh-huh! (That was me pretending to be Elvis. I know – it’s impressive)
